Homemade Creamy Peanut Butter

I have a serious soft spot for peanut butter. Almond butter too.

So much so that I fear my most beloved kitchen tool, the food processor, is getting too much of a work out from all the use. I think our food processor is more than ten years old now. Although it has seen better days it has been one very sturdy appliance. Seriously, if there was one kitchen appliance that I couldn't live without it would have to be the food processor. Just watch, I hope something bad doesn't happen to it now that I've gone and said that [crosses fingers...and toes for that matter].

If you love peanut butter as much as I do, you will love this recipe. This one is nothing but simple and all natural with just a pinch of sea salt to round it out that creamy peanuty taste. You'll need just 2 ingredients to make it.

I think everyone who loves nut butter should have a good basic peanut butter recipe. It's so easy to make! I actually find it easier to make than almond butter because there isn't as much need to scrape down the processor. It also takes slightly less time to turn buttery.

Peanut butter is such a versatile thing...

Peanut butter and toast. Peanut butter sandwiches. Panini's. Vinaigrette's. Sauces. Delicious oatmeal topper. Cookies. All kinds of desserts including peanut butter pie. Pancakes. Smoothies. I could probably go on-and-on but I'm making myself hungry.

Homemade Creamy Peanut Butter gluten free, vegan (makes 1 1/2 cups)

Ingredients:

3 cups (15 ounces) unsalted dry roasted peanuts

1/2 tsp sea salt

Directions:

  1. Place the peanuts and salt in the bowl of a food processor. Process and scrape down the sides of the bowl until peanuts turn in to a smooth, creamy texture. About 10-15 minutes.
  2. Spoon out the peanut butter into a glass jar or airtight container and store in the refrigerator.

*Note* During the processing, the peanuts will turn into a big clump. Keep the processor going and it will start to smooth out around the 9 minute mark. I personally found no need to scrape down the sides of the bowl.

Things I'm loving lately - Tidbits

I love posts where bloggers talk about they are currently loving. To switch things up a little and have some fun on this Thursday morning, here are a few random things I'm loving lately.

1. Late sunsets + perfect temperatures make for gorgeous evenings spent walking by the water. I love the nights that I get to do this. It's so relaxing and peaceful.

Things I'm Loving Lately2. Casa Primi blend coffee beans from the Coffee Tree Roastery on Bloor Street in Toronto is where it's at. So smooth!

Coffee Tree Roastery3. I've become enthralled with the Game of Thrones Books after being introduced to them about a year ago. I Just finished book two and have started book three. They just keep getting better and better!

Game of Thrones4. We planted our bell peppers and tomatoes three weeks ago. The peppers are starting to get nice and strong and the tomatoes are coming along. I've spotted a few flowers already on the peppers.

Things I'm Loving Lately5. Homemade Greek salads with a bit of a twist. I use a mixture of fresh romain and boston lettuce and add a few black olives, feta cheese crumbles, sliced cucumber, dried cranberries, roasted cashews, and grilled chicken for protein. All dressed up in this balsamic vinaigrette. I had forgotten how much I love Greek salads. I started making them to have for lunch now and then. Dee-lish.

Salads6. This bowl of hot oats for breakfast. Stove top cooked oats topped with chia seeds, almond butter, fresh figs, and homemade granola.

Oatmeal and Granola7. Hello camera upgrade! After much research and consideration I finally made a decision and am now working with the Canon 60D.

Things I'm Loving LatelyMy fabulous Panasonic Lumix point-n-shoot served me very well. The lens on this camera is fantastic and I would definitely recommend it to anyone looking to buy a handy lightweight point-n-shoot.
